THE CLASSIC
IZOLA is built upon two simple things — croissants and sourdough. Sometimes, we'll get asked why we don't serve salads, sandwiches, cakes, cookies, the list goes on. The simple reason is that we just want to serve food that we know we can do well and that we love. If we don't absolutely love it, it doesn't make it to our menu.
Take our traditional croissant. It began 4 years ago with a recipe we found on the side of a flour bag. Having not had any culinary training, we just tested and failed (700+ times) our way to the croissant we serve today. We would change a single element at a time - whether it was the temperature of the room that we were rolling in, the type of butter or flour we used, the thickness we would roll the dough to, whether we froze the dough between each step or let it rest in the refrigerator, each step was tested and intentional. It only took us hundreds and hundreds of iterations and maybe a few tears!
And today the IZOLA croissant takes our Dojo team 4 days to make, resulting in 96 layers of buttery goodness. Topped with a sprinkling of Maldon sea salt and baked until it is a deep golden brown.
We are open every Tuesday - Saturday, 7a-2p, with live music every Saturday.
Either pop on by or place an order ahead of time. If you have a pre-order, you can also use IZOLA Drive By — just double park outside, give us a call at 619-289-8358, and we'll deliver your croissant and cappuccino to you in your car!

As we raise funds to build IZOLA Main - our new zero-emission production factory in City Heights - we are driven by how this step will help support our justice goals....Like the increased efficiency gains that will provide us the opportunity to reinvest back into our team through higher wages, and more career development and training. Our current leadership team is diverse - 67% female, 50% BIPOC, and 17% LGBTQIA+ and our investment in IZOLA Main allows us to scale this further. Investing in material handling for our production will allow us to remove thousands of pounds of plastic and paper from ever being produced. And there is so much more...
